


Vine pruning
Once the harvest is over, the sap goes back into the vine stock. The effect of the cold puts the vineyard in a dormant state over the Winter months and the leaves fall. The pruning can then start. Its aim is to reshape the stock for the forthcoming year.
Only one or two branches from the past year – able to bear fruit - are kept. The plant will restart its growth from the ‘wood’ of the previous year.
